Description: Cattaraugus was a knife maker from NY (Case Knives was originally part of the same company). They are some of my favorite knives; they are thin and lightweight but strong. The blades are made with high carbon steel so hold an edge quite well. This also means they tarnish more easily, and this one, though overall pretty clean and shiny, does need a bit of buffing to bring back its gleam the full-length of the blade. I think compared to my Wusthof, Cattaraugus makes the better blade.
