Hard Red Winter and Hard White Wheat are both high in protein content and excellent for use in making yeast breads, though they can be used in just about any recipe. The Hard Red Winter has a an earthy, nutty flavor, whereas the Hard White has a smoother, buttery taste. Soft White wheat is lower in protein and is most suitable for flatbreads, cookies, pastries, and recipes calling for baking powder rather than yeast. Protein content of our Hard Red is 12%, our Hard White is 13.4 %, and our Soft White is 9%. Like all wheat grown in the U.S.A. ours is Non-GMO. Sproutable. They will germinate for making sprouted dough, or wheatgrass for your juicer.
